Is squash a sport?
Um. It's not. This also shows you how much squash i eat. I love squash in all its forms. My "go to" is USUALLY kabocha squash. Sometimes as roasted kabocha or kabocha soup.
But recently? BUTTERNUT SQUASH LIFESTYLE:
The balsamic butternut salad is delicious. Butternut squash soup and vegan mac and cheese are both delicious.
BUT WHAT NOW? But now, we're making a delicious butternut squash stuffed with my favorite recipe for cauliflower stuffing. It is TOO good.

Is Butternut Squash Stuffed Healthy?
Butternut squash has a lot of health benefits. It's packed with fiber, vitamins C and A, potassium and magnesium. Also, it is packed with beta-carotene. It is packed full of vegetables and pecans which are rich in calcium, magnesium and potassium.
Ingredients
Grab a few ingredients to make this simple fall meal OR meatless Thanksgiving dish:
- Butternut squash, medium size
- divide 1 tbsp plus 1 tsp of olive oil
- 1/2 cup onion, diced
- 1/2 cup celery, diced
- 1 tsp minced garlic
- Cut into small pieces 3 cups of cauliflower
- Parsley, 1 tbsp minced + extra for garnish
- Half a teaspoon of poultry seasoning
- Ground sage, 1/4 tsp
- Half a teaspoon of salt
- Pinch of Pepper
- 1/4 cup vegetable broth
- 1/4 cup pecans
Instrucciones
Prep
Pre-heat your oven to 400degF. Line a baking tray with aluminum foil. Scoop out the seeds by cutting the squash lengthwise down the middle. Rub the squash with 1 teaspoon oil and sprinkle salt.
Cook for 40-50 minutes until the mixture is soft. Allow to cool a little.
Fry
On MEDIUM, heat the remaining oil in a large pan. Add the celery and onion and cook for 6-7 minutes until they are lightly browned.
Cook
Cook the cauliflower, stirring often, for about 10 minutes, until it begins to soften. Add the parsley and poultry seasoning. Savory, salt and pepper are also added. Cook for two minutes.
Pour
Pour in the broth and reduce the heat to low-medium. Cover and cook for about 10 minutes, or until the cauliflower is soft.
Scoop
Use the scooped out squash to make something else! Fill the squash with the cauliflower mixture. Sprinkle the chopped pecans on top.
Toast
Place your squash in the oven again to lightly toast the nuts, approximately 7-10 minutes.
Add additional parsley to the top.

Fillings can be used for other purposes
Since you will need to remove some of the butternut squash center to make the vegetarian stuffed butternut recipe, I thought it would be helpful to share some other ideas for how to use this:
- Use butternut squash instead of sweet potatoes to make this breakfast bowl (my favorite).
- Mix it with miso lemon tahini and air-fried brussels sprouts. It's SO good to combine sweet, tangy and crispy with creamy. Add protein to make this a complete meal.
- Butternut squash can be used in place of pumpkin when making pumpkin protein oatmeal.
You can find endless options if you use your imagination!
FAQ
You can choose from a variety of herbs. You can expect to find sage and thyme as well as marjoram, black pepper, marjoram and nutmeg. Some people add celery seed, garlic powder or onion powder.
Butternut and kabocha are both winter squashes, but the butternut is more bell-shaped while kabocha has a squarish shape. Kabocha is a little bit chestnut-flavored. Butternut is creamy and smooth (hence the name I believe), but kabocha has a denser, dryer texture.
I don't. Most people don't. It's bitter and has a tough texture.
How to store stuffed butternut squash
Let the squash cool down completely. Keep it in the refrigerator for up to four days. The squash can be frozen. Wrapping it in aluminum or plastic and placing it in an airtight container is what I do. It will keep for 3 months. Let it thaw overnight in the refrigerator when you are ready to eat. If you are reheating it, make sure that the internal temperature is 165degF.
Delicious Stuffed Butternut Squash
Ingredients
- 1 butternut squash medium-sized
- 1 tbsp + 1 tsp olive oil divided
- 1/2 cup onion diced
- 1/2 cup celery diced
- 1 tsp garlic minced
- 3 cups cauliflower cut into small pieces
- 1 tbsp parsley minced + additional for garnish
- 1/2 tsp poultry seasoning
- 1/4 tsp ground sage
- 1/2 tsp salt
- A pinch of pepper
- 1/4 cup vegetable broth
- 1/4 cup pecans
Instructions

Pre-heat your oven to 400degF. Line a baking tray with tin.

Scoop out the seeds by cutting the squash in half lengthways. Rub the squash with 1 teaspoon oil and sprinkle salt. Bake for 40-50 minutes, or until the potatoes are soft. Allow to cool.

On MEDIUM, heat the remaining oil in a large pan. Add the celery and onion and cook for 6-7 minutes until they are lightly browned.

Add cauliflower to the pan and stir frequently, until it begins to soften. This should take about 10 minutes.

Cook for 2 minutes with the sage and poultry seasoning. Add parsley and salt and pepper.

Pour the broth in, reduce the temperature to MEDIUM, cover the pan and cook for about 10 minutes, or until the cauliflower is soft.

Use the scooped out squash to make something else! Fill the squash with the cauliflower mixture. Sprinkle the chopped pecans on top.

Increase the temperature to 450degF, and return the squash to the oven for a few minutes to toast the pecans.

Add additional parsley to the top and DIVERT!
Notes
- The skin of the squash is not recommended for consumption. It has a bitter taste and a tough texture.
- Depending on the seasoning you select, it will contain different ingredients. You can expect to see sage and thyme as well as marjoram, black pepper, nutmeg and rosemary. Others may add celery seed, garlic powder, onion or nutmeg.
